Ingredients
- 3 large sweet potatoes, peeled and cut into 1/2-inch cubes
- 1 cup water
- 1 cup fresh orange juice
- 1/4 cup soy sauce
- 2 TBS crystallized ginger
- 2 TBS rice wine or white wine vinegar
- 1 tsp. minced garlic
- 1/2 tsp. salt
- 1/2 tsp. red crushed pepper
- 1 TBS cornstarch
- 1 TBS water
Preparation
Step 1
Combine cubed sweet potatoes, 1 cup water, and next 7 ingredients in a Dutch oven. Bring mixture to a boil; cover, reduce heat, and simmer 20 to 25 minutes or until sweet potatoes are tender.
Stir together cornstarch an 1 TBS. water, stirring until smooth; stir into sweet potato misture. Bring to a boil over medium heat; boil, stirring constantly, 1 minute or until mixture is slightly thickened. Remove from heat.
