Ingredients
- 2 med. garlic cloves (not always)
- 1 med onion diced
- 2 med carrots diced
- 1 med sweet red pepper diced (green ok too)
- 1 med stalk of celery diced
- 2 small zucchini diced
- 2 small yellow squash (my addition)
- 2 cups cauliflower florets
- 2 cups broccoli small florets
- recently added grape tomatoes cut in half
- 1 Can Pastene Tomatoes
- 1 Cup Beef Broth
- Salt and Pepper
- 1/2 bag spinach
- I never really measure anything and sometimes you eat with a fork.
Preparation
Step 1
For Instant Pot:
Set to Sauté and sauté onion; cancel Sauté
Add all ingredients to Pot - watching that not too much liquid
Set to Pressure Cook, High, 3 minutes
Natural Vent
Add Spinach
