Instant Pot / Lois' Version of No Point Weight Watcher Vegetable Soup

Ingredients

  • 2 med. garlic cloves (not always)
  • 1 med onion diced
  • 2 med carrots diced
  • 1 med sweet red pepper diced (green ok too)
  • 1 med stalk of celery diced
  • 2 small zucchini diced
  • 2 small yellow squash (my addition)
  • 2 cups cauliflower florets
  • 2 cups broccoli small florets
  • recently added grape tomatoes cut in half
  • 1 Can Pastene Tomatoes
  • 1 Cup Beef Broth
  • Salt and Pepper
  • 1/2 bag spinach
  • I never really measure anything and sometimes you eat with a fork.

Preparation

Step 1

For Instant Pot:
Set to Sauté and sauté onion; cancel Sauté
Add all ingredients to Pot - watching that not too much liquid
Set to Pressure Cook, High, 3 minutes
Natural Vent
Add Spinach
