Summer Strawberry Crepes

Ingredients

  • 8 slices white bread, crusts cut off
  • 1 qt strawberries, washed and diced
  • 1 8 oz pkg cream cheese, softened
  • 1/2 C Greek yogurt, any flavor
  • 2 T vanilla (or plain) sugar
  • 3 eggs
  • 2 T half n half
  • cooking spray

Preparation

Step 1

Using a rolling pin, roll the bread completely flat and thin.

Mix the cream cheese, yogurt, and sugar in a bowl, whisking lightly.

Spread the flattened bread with the cheese mixture.

Sprinkle a bit of the berries in a thin line near the edge.

Roll the bread over the berries and continue to roll up.

Continue with the rest of the bread.

Whisk the eggs and half n half.

Heat a saute pan over medium heat and spray lightly with cooking spray.

Roll the bread rolls in the egg mixture. Place in pan, edge side down.

Saute on all sides until brown.

Remove to a plate. Spoon some of the cheese mixture over the centers of them all and sprinkle with more strawberries.
Serve warm.
