Ingredients
- 2 carrots, diced
- ◾1 yellow onion, diced
- ◾5 cloves garlic, minced
- ◾2 stalks celery, diced
- ◾1 can stewed tomatoes
- ◾1 cup prepared lentils
- ◾1/2 cup dry quinoa
- ◾2 cups fresh spinach
- ◾2 cups vegetable broth
- ◾3 cups water
- ◾1 tbsp. olive oil
- ◾1 tsp. basil
- ◾1 tsp. garlic
- ◾1/2 tsp. parsley
- ◾sprinkle of paprika
- ◾salt and pepper to taste

Directions: In a large Dutch oven, heat the olive oil and add your garlic, onion, and celery, stirring frequently over medium high heat. Once the onion is translucent (~5 minutes), add your carrots and heat for an additional 2-3 minutes, stirring often. After your carrots begin to get tender, add your vegetable broth, water, lentils, and tomatoes. Add your spices and stir. After a few minutes, add your spinach and allow it to wilt. Lastly, add your quinoa, lower your heat and simmer for at least 30 minutes before serving.
