quinoa vegetable soup

Ingredients

  • 2 carrots, diced
  • ◾1 yellow onion, diced
  • ◾5 cloves garlic, minced
  • ◾2 stalks celery, diced
  • ◾1 can stewed tomatoes
  • ◾1 cup prepared lentils
  • ◾1/2 cup dry quinoa
  • ◾2 cups fresh spinach
  • ◾2 cups vegetable broth
  • ◾3 cups water
  • ◾1 tbsp. olive oil
  • ◾1 tsp. basil
  • ◾1 tsp. garlic
  • ◾1/2 tsp. parsley
  • ◾sprinkle of paprika
  • ◾salt and pepper to taste

Preparation

Step 1

Directions: In a large Dutch oven, heat the olive oil and add your garlic, onion, and celery, stirring frequently over medium high heat. Once the onion is translucent (~5 minutes), add your carrots and heat for an additional 2-3 minutes, stirring often. After your carrots begin to get tender, add your vegetable broth, water, lentils, and tomatoes. Add your spices and stir. After a few minutes, add your spinach and allow it to wilt. Lastly, add your quinoa, lower your heat and simmer for at least 30 minutes before serving.
