White Bean Roasted Red Pepper Salad

Ingredients

  • 1 1/2 tablespoons olive oil
  • 1 1/2 teaspoons apple cider vinegar
  • 1 teaspoon honey
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 small clove garlic, grated on a microplane
  • 1 (16 oz) can cannellini beans, rinsed and drained
  • 1 roasted red bell pepper, chopped
  • 1/4 small red onion, thinly sliced
  • 3 tablespoons minced fresh parsley

Preparation

Step 1

Whisk together the olive oil, vinegar, honey, mustard, salt, pepper, and garlic in a medium bowl. Stir in all remaining ingredients; refrigerate until serving.
