LAMB LEG - SOUVLAKI (GREEK LAMB BROCHETTES)

Ingredients

  • 1 1/2 C. onion
  • 1 1/3 C. olive oil
  • 1/3 C. fresh lemon juice
  • 3 T. minced fresh garlic
  • 3 T. oregano
  • 2 T. freshly ground pepper
  • Lean leg of lamb (2 1/2-3 lbs.)

Preparation

Step 1

In a food processor puree onion. Blend in olive oil, fresh lemon juice, garlic, oregano and freshly ground pepper. Arrange 2" cubes
of lamb in a glass container. add marinade, cover and refrigerate overnight. Let lamb warm to room temperature. Thread cubes onto 6 skewers and lightly sprinkle with salt. Grill or broil 3-4 min. each side until medium rare. Serve atop rice pilaf with a cucumber, yogurt and mint salad.
