LEG OF LAMB AND OLIVE SKEWERS

Ingredients

  • 1-1/4 1b. lamb leg meat, cut into 6 dozen
  • 1 1/2 "-thick , bite-sized pieces
  • 1 1/3 C. fresh lemon juice
  • 3 T. olive oil
  • Finely grated zest of 1 lemon
  • 2 tsp ground coriander
  • 2 tsp cumin
  • 2 tsp Hungarian paprika
  • 1 tsp cinnamon
  • 1 tsp minced garlic
  • 1 tsp sea salt
  • Several grindings fresh black pepper
  • 24 small green olives, pitted

Preparation

Step 1

In a bowl, mix together all ingredients, except olives, Let stand at least 20 minutes (or chill several hours)

Pre-soak short wooden skewers in warm water at least 20 minutes, Pierce 3 pieces of lamb and 1 olive onto each skewer.

Grill skewers until lamb is browned outside, but still tender with some pink inside.
