Ingredients

  • 1/2 C light brown sugar
  • 1/2 C low fat buttermilk
  • 1/4 C egg substitute
  • 3 TBSP canola oil
  • 3/4 C flour
  • 3/4 C ground flaxseed
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/8 tsp salt
  • 1 C pureed banana

Step 1

1. Preheat oven to 350 degrees; coat nonstick 8 X 4 loaf pan with cooking spray.
2. Combine sugar, buttermilk, egg substitute and oil in large bowl. Whisk until smooth.
3. Combine all other ingredients except banana, in medium bowl. Whisk to mix. Add to liquid ingredients, and stir just until blended, do not over mix.
4. Add bananas and stir to mix. Pour into prepared pan.
5. Bake for 40 to 50 minutes or until knife inserted in center comes out clean.
