Pasta Primivera

Ingredients

  • 1-12 oz. penne pasta
  • 1 green pepper
  • 1 red pepper
  • 1 yellow pepper
  • 2 baby egg plants
  • 2 med. zuchinni
  • 1 purple onion
  • 4 cloves garlic
  • 1/4 cup virgin olive oil
  • 1 Tbsp. balsamic vinegar

Preparation

Step 1

Toss vegetables with oil and vinegar and roast on sheet pan for 1/2 hr. @425 degrees
Combine with cooked pasta and add 1/4 tesp. thyme, 1 teasp. basil,7 teasp. parsley flakes, salt and pepper.
Add 1 cup boullion (knorrs)
