Ingredients
- Seafood Seasoning Mix:
- 5 quarts. water
- 1/3 cup Seafood Seasoning Mix*
- 6 bay leaves
- 4 stalks celery, cut into 3-inch pieces
- 2 onions, peeled and cut into wedges
- 2 lemons, halved
- 2 pounds small red potatoes
- 5 ears corn (husks removed), halved
- 1 1/2 pounds cooked smoked sausage, cut into 2-inch pieces
- 2 1/2 pounds large unpeeled shrimp
- Garnish: fresh lemon wedges, Seafood Seasoning Mix
- 1/2 cup salt
- 1/4 cup garlic powder
- 1 tablespoon crushed red pepper
- 1 tablespoon celery salt
- 1 tablespoon paprika
- 1 tablespoon onion powder
- 1 teaspoon ground cloves
Preparation
Step 1
In a large 10-quart stockpot, bring water, Seafood Seasoning Mix, bay leaves, celery, onions, lemons, and potatoes to a boil over high heat. Add more water if necessary. Reduce heat to medium; cook 8 minutes, or until almost tender. Add corn and sausage; cook 8 minutes, or until tender.
Add shrimp to hot potato mixture; remove from heat. Cover, and let stand 12-15 minutes, or until shrimp turn pink.
Carefully drain shrimp mixture. Serve with fresh lemon wedges and additional Seafood Seasoning Mix, if desired.
*For Seafood Seasoning Mix: in a small bowl, combine all ingredients. Cover, and store in a cool, dry place.
