Ingredients
- Sauce:
- 1/3 cup olive oil
- 1 1/2 cup finely chopped onion
- 1 clove garlic crushed
- 1 (2lb.3oz.) Italian peeled tomatoes, undrained
- 1-6oz. can tomato paste
- 2 Tbsp. chopped parsley
- 1 Tbsp. salt
- 1 Tbsp. sugar
- 1 1/2 cups water
- 1 teasp. oregano
- 1 teasp. basil
- 1/4 teasp. pepper
- Makes 18 2-13x9x2" pyres baking dishes
- Batter:
- 6 eggs
- 1 1/2 cups flour
- 1/4 teasp. salt
- 1 1/2 cups water
- Combine and let stand 1/2 hr. then fry 3 Tbsp. batter in 8" skillet
Preparation
Step 1
Filling: 1/4 cup filling for each manicotti
2 lbs. ricotta cheese
1- 8oz. mozzarella cheese, grated
1/3 cup grated parmesan
2 beaten eggs
1 teasp salt
1/4 teasp. pepper
1 Tbsp. chopped parsley
1/4 cup grated parmesan (to sprinkle)
Bake 350 degrees for 1/2 hr.
