Ingredients

  • 1/2 cup egg beaters
  • 1/3 cup milk
  • 1/4 cup applesauce
  • 2 Tbsp oil
  • 1 cup all purpose flour
  • 3/4 cup whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2/3 cup sugar or equivalent of baking splenda-sugar mix
  • 2 very ripe bananas, mashed (about 1 cup)
  • 1 tsp vanilla

Preparation

Step 1

Heat oven to 350 degrees F. Spray 9 x 5 or 8 x 4 loaf pan with cooking spray; dust with flour.

In small bowl, stir egg beaters, milk, applesauce,oil.

In another small bowl, stir flours, baking soda, salt.

In large bowl, beat sugar, bananas, vanilla with mixer. Alternately add egg and flour mixture, beating on low and scraping bowl often.

Pour into pan. Bake x 35-40 minutes or until a toothpick inserted into center comes out clean.
