Ingredients
- 12 Hardboiled eggs
- 1/2 cup mayonnaise
- 2 tsp Dijon mustard
- 2 tsp vinegar (white or cider)
- 2 red, orange, yellow or green bell peppers
- paprika
Preparation
Step 1
Peel the eggs, then slice each one in half. Place the yolks in a medium-size bowl and mash them with a fork. Add the mayonnaise, mustard, and vinegar and mix until the consistency is even.
Fill the egg white halves with the yolk mixture and sprinkle with paprika. Makes 2 dozen
