Ingredients
- 1 1/2 tsp cayenne pepper
- 1 1/2 tsp paprika
- 3 tsp salt
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1/2 tsp oregano
- 1/2 tsp thyme
- Olive oil
- stick butter

Step 1
Mix all dry ingredients thoroughly. Rub three of four single serving fish fillets with olive oil and dust with blackening mix.
Heat cast iron skillet to nearly red hot in the oven. When ready, take heated skillet to grill. Drop in a half stick of butter followed an instant later by the fillets. Cook no more than 2 minutes on each side. Add a bit more butter after turning if needed.
