Ingredients
- Red and Green Pepper Salsa:
- 1 C. olive oil
- 1/2 tsp. minced fresh garlic
- 1/4 tsp. ground black pepper
- 1/2 C. red wine vinegar
- 1 tsp. oregano
- 1/2 tsp. salt
- 1 lb. beef tenderloin, cut into 1 inch cubes
- 1 medium green pepper, diced fine
- 1 medium red pepper, diced fine
- 3 green onions, minced
- 1 tsp. minced fresh garlic
- 1/2 C. vegetable oil
- 1/4 C. tomato juice (v-8 will work)
- 1 T. minced fresh parsley
- 1/2 tsp. ground black pepper
- 1 tsp. salt
- 4 dashes of Tabasco Sauce
- Juice of 1 lemon
Preparation
Step 1
First, make marinade; Combine oil, garlic, pepper, vinegar, oregano, and salt.
Prepare kabobs by placing 3 cubes of beef on each skewer. Place in marinade and refrigerate overnight.
Grill or saute kabobs until desired wellness. Serve with salsa.
For Salsa:
Combine all ingredients and mix well. Salsa is best if allowed to stand for at least two hours. Serve with beef kabobs.
