RED AND GREEN PEPPER SALSA

Ingredients

  • 1 medium green pepper, diced fine
  • 1 medium red pepper, diced fine
  • 3 green onions, minced
  • 1 tsp. minced fresh garlic
  • 1/2 C. vegetable oil
  • 1/4 C. tomato juice (v-8 will work)
  • 1 T. minced fresh parsley
  • 1/2 tsp. ground black pepper
  • 1 tsp. salt
  • 4 dashes of Tabasco Sauce
  • Juice of 1 lemon

Preparation

Step 1

Combine all ingredients and mix well. Salsa is best if allowed to stand for at least two hours. Serve with beef kabobs.
