Skinny Cake Batter "Ice Cream" Sandwiches

Ingredients

  • 1 box of Duncan Hines Funfetti Cake Mix (I think that brand does matter in this one...)
  • 2 cups plain, fat free, Chobani Greek yogurt
  • 1 heaping cup of fat free/lite Cool Whip
  • Low Fat Graham Crackers

Preparation

Step 1

1.) Mix the three first ingredients together. You will have to mix them very well and it may take awhile but you want to make sure you fully incorporate them so you don't get random bites that are all cake mix or all Greek yogurt/Cool Whip.

2.) Spread a generous portion of the cake batter mix on a square of low fat graham cracker. Sandwich between another square. Smooth out the excess batter around the edges so it looks like a real ice cream sandwich. I dipped the edges in sprinkles for a fun and colorful look.

3.) Place finished sandwiches in an air tight container and layer wax paper between them so they don't stick together. Freeze for a few hours before eating. They can be stored in the freezer in an air tight container for as long as you think they still look good.
