Mom’s New Jersey Macaroni Salad

Ingredients

  • 1 16-ounce box elbow macaroni
  • 1 tablespoon kosher salt
  • 1 stalk celery, chopped
  • 1 red onion, chopped
  • 1 red pepper, diced
  • 1 1/2 cups mayonnaise
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons Gherkins sweet pickle juice
  • 1 tablespoon sugar
  • 6-7 Sweet Gherkin pickles, chopped or 2 tbs sweet pickle relish
  • 1/2 teaspoon celery salt (optional)
  • 1 teaspoon fresh ground black pepper
  • 2 4-ounce cans baby shrimp

Preparation

Step 1

In a serving large bowl combine all the ingredients. Toss well. Cover and refrigerate until ready to serve.
