Mark's Breakfast Specialty

Ingredients

  • Green pepper
  • Onion
  • Potato
  • Bacon or Sausage
  • Sharp Cheddar Cheese
  • Eggs

Step 1

Cook the bacon or sausage however you like. I usually do the bacon in a cast iron skillet, then cut it into pieces when it is finished. Set aside.

Boil water for the potatoes. While the water is boiling, cut up the potatoes, onions, and pepper. In a pan, saute the onions and peppers with a little butter, salt, and pepper (I usually cook the onions and peppers in the same pan as the bacon or sausage, after I have drained most of the grease). Cook them until they soften up or are translucent. While that is happening, boil the potatoes until they are almost fork tender.

Once the potatoes are finished, add them to the onions and peppers. Mix in the bacon or sausage and cook for a few minutes. Add salt and pepper, a little paprika, and a little oregano if you want. I don't add it every time, but I did last time and I think people liked it.

Depending on how much you want to make, you can either leave it in the pan, and put the cheese on top, then crack the eggs, and simmer on low for about 20 min, or until the eggs are done. What I have been doing lately is putting everything into a rectangular pyrex dish, adding the cheese and eggs, and putting it in the oven at like 300 or 325 until the eggs are cooked. Both ways work great, but if you want to make a lot, then use the dish.
