Sfingi (Cathy's Recipe)

Ingredients

  • The following will make over 40 Sfingi:
  • 2 cups Presto self rising cake flour
  • 2 cups Ricotta
  • 14 tsp sugar
  • 2 eggs
  • 1 tsp vanilla
  • Vegetable oil (Canola Oil)
  • Powdered sugar to sprinkle on after cooling
  • To make less than 25/30, use 1/2 of all ingredients

Preparation

Step 1

Heat vegetable oil in pot (do not bring to a boil)

Mix all ingredients (except for powdered sugar) together. Once oil is hot, use a teaspoon to drop in dollops of mix into oil.

*Dollops must float in oil*
