Fruit and Nut Energy Bars

Ingredients

  • Apple-Pecan
  • 1/3 c pecans
  • 1/3 c pitted dates
  • 1/3 c dried apples
  • Apricot-Muffin
  • 1/3 c almonds
  • 1/3 c pitted dates
  • 1/3 c dried apricots
  • Cherry Tart
  • 1/3 c walnuts
  • 1/3 c pitted dates
  • 1/3 c dried cherries
  • Peanut Butter Snaps
  • 2/3 c peanuts
  • 1/3 c pitted dates
  • 1/4 t vanilla
  • pinch of salt

Preparation

Step 1

Grind pecans in food processor. Transfer nuts to a bowl, then process pitted dates and dried apples. Add nuts back in with a pinch of cinnamon, then process until mixture holds together when squeezed. Divide into six portions, mold each into a bar and wrap in plastic wrap.
