Squash Casserole

Ingredients

  • 3 c yellow squash sliced
  • 1 package herb seasoned stuffing mix
  • 1 c sour cream
  • 1 can cream of celery soup undiluted
  • 2 t salt
  • 1/2 c chopped onion
  • 1/2 c grated carrots
  • 1/2 c butter melted

Preparation

Step 1

Boil squash and onion in salted water for 5 min. Drain and set aside.
Mix carrots, half the stuffing mix, sour cream, soup and 1/4 c melted butter.
Layer squash in a 9x13 pan. Spread remaining stuffing mix on top and drizzle with remaining butter.
Bake in 350 oven for 20 min.
