Spinach Noodles with Sauted Veggies

Ingredients

  • 6 oz spinach noodles uncooked
  • Pam
  • 1 med onion chopped
  • 1 clove garlic crushed
  • 1 med yellow squash thinly sliced
  • 1 med zucchini thinly sliced
  • 1 c fresh corn
  • 1 T chopped parsley
  • 3/4 t dried basil
  • 3/4 t dried oregano
  • 1/4 t salt
  • 1/4 t black pepper
  • 2 medium tomatoes peeled and chopped

Preparation

Step 1

Cook noodles according to package direcions, then drain. Transfer to a serving platter and keep warm.
Coat a large skillet with Pam and place over med heat until hot. Add onion and garlic. Saute 3 min or until tender. Add yellow squash and next 7 ingredients. Saute 4 min or until tender. Stir in tomatoes and serve over warm noodles.
