Apple-Glazed Pork Tenderloin

Ingredients
- Marinade:
- 2 whole pork tenderloins (each about 3/4 pounds)
- 1/2 cup sour mash whiskey
- 1/2 cup unfiltered apple cider
- 1/4 cup firmly packed brown sugar
- 1/8 teaspoon ground cinnamon

Step 1
Place the pork tenderloin in a glass or enameled low-sided baking dish. Thoroughly mix the whiskey, cider, brown sugar, and cinnamon, and pour over the tenderloin. Cover the dish with plastic wrap and refrigerate 8 hours or more. If possible, turn the tenderloin several times. ( if you desire more marinade, add 1/4 cup more cider)
Heat the oven to 325 degrees. Place the tenderloin, still resting in the marinade, in the hot oven and cook 1 hour and 15 minutes or until the internal temperature of the meat is 170 degrees. Every 15 or 20 minutes, brush the tenderloin with the gradually reducing marinade.
Once the tenderloin is done, let it stand out of the oven 10 to 15 minutes before carving.
