Ingredients
- 8 chicken thighs, skinned
- 1 red onion, minced
- 8 tbsp ketchup
- 2 tbsp maple syrup
- 1 tbsp worcestershire sauce
- 1 tbsp powdered mustard
- 1 garlic clove, minced
- 3 tbsp oil
- 4 sweet potatoes, cut into chunks
- Marinating time: 20 minutes
Preparation
Step 1
Preheat oven to 400 degrees. Score each chicken thigh 2-3 times.
Mix all remaining ingredients, except sweet potatoes together in a large bowl. Add chicken and toss well to coat. Cover with plastic wrap and let marinate in a cool place for 20 minutes, then add sweet potatoes and toss well to coat.
Put chicken mixture into baking dish and roast for 40-50 minutes or until well browned. The chicken should be tender and juices run clear when skewer in inserted into the thickest part of the meat.
