  • turkey liver
  • flower
  • butter
  • turkey heart
  • milk

Step 1

Chop up liver (uncooked)
Put a scoop of flower in a bowl and sprinkle with salt and pepper.
Coat liver in flower.
Put a pat of butter in a small frying pan
Brown 1 liver on a high flame cool until the blood stops coming out
Cut up the heart and the other parts then mince into very small pieces
When finished mince the liver in and mix
Pull the meat off the neck and mince and add to the other mixture
Put 1 tablespoon butter in a double boiler
When the butter is melted add flower and mix with a whisk in to a stiff ball
Add milk and break up ball by beating with whisk.
It will look lumpy at first but it will break up
Keep adding milk and mixing until it is a creamy consistency
Turn off the heat
Add an egg and mix in
Add the giblets to grease in the pan and mix around
Add the flower mixture and mix around
