Ingredients
- 1 Cup Unsalted Butter softened
- 2/3 cupPowdered Sugar
- 2 tsp Vanilla Extract
- 2 1/2 cups All-Purpose Flour
- 1/2 tsp Salt
- 2/3 Cup Macadamia Nuts chopped
- 1 Cup Mini Chocolate Chips
Preparation
Step 1
Line two baking sheets with parchment paper and set aside.
In the bowl of a stand mixer fitted with the paddle attachment, beat together the butter and sugar until creamy and doubled in volume, about 2 minutes. Add in the vanilla, flour, and salt and mix until combined.
Add in the chopped macadamia nuts and chocolate chips and mix on low until incorporated.
Use a 1-inch cookie scoop to scoop the dough onto the prepared baking sheets. Press down slightly with the flat bottom of a glass or measuring cup to flatten cookies.
Chill the dough on the baking sheets for 15 minutes. Preheat the oven to 350 F.
Bake the cookies for 12-16 minutes, until the edges just begin to turn golden. Let them cool completely on the sheets. Store in an airtight container.
