O'Brien Potatoes

Ingredients
- 2 tablespoon vegetable oil
- 1-1/2 pound red potatoes; unpeeled, 1/2 inch pieces
- 1 green bell pepper; 1/2 inch pieces
- 1 red bell pepper; 1/2 inch pieces
- 1 onion; chopped
- 1/2 cup chicken broth
- 2 teaspoon Worcestershire sauce
- 4 scallions; sliced
- salt and pepper

Preparation
Step 1
Heat oil in 12 inch nonstick skillet over medium heat until shimmering. Add
potatoes, peppers, and onion and stir to coat with oil. Stir in broth,
Worcestershire sauce and 1-1/2 teaspoons salt. Cover and simmer until
potatoes are tender, stirring occasionally, about 15 minutes.
Uncover and increase heat to medium high. Cook, stirring occasionally,
until liquid has evaporated and potatoes and peppers are spotty brown,
about 12 minutes. Season with salt and pepper to taste. Stir in scallions.
