Chicken Rotini Salad

Ingredients

  • 6 cups (16 oz) Rotini or Rotelle, uncooked
  • 1-1/2 cups fresh green beans, cut into 1/2 inch lenghts
  • 1-1/2 cups zucchini, cut into 1/2 inch pieces
  • 1 cup (8 oz can) chick peas, drained
  • 1 cup chopped red onion
  • 3/4 cup sliced celery
  • 2/3 cup chopped ripe olives
  • 1/3 cup EACH chopped sweet green and red pepper
  • 1/2 cup grated Parmesan cheese
  • 1-1/2 cups reduced fat or regular Italian salad dressing
  • 2 tablespoons fresh lemon juice

Preparation

Step 1

Cook pasta according to package directions; during last 1 minute of cooking, add green beans and zucchini to pasta cooking water. Drain. Rinse with cold water to cool quickly; drain well. In large bowl, toss cooled pasta and vegetables with remaining ingredients. Cover; refrigerate. 16 servings (about 1 cup each).
