Stuffed Bell Pepper Soup

Ingredients

  • 1 lb ground beef
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 cup diced onion
  • 1 can diced tomatoes (29 oz)
  • 1 can tomato sauce (15 oz)
  • 1 can chicken broth (14 oz)
  • 1/4 tsp dried thyme
  • 1/4 tsp dried sage
  • salt and pepper, to taste
  • 1 cup white rice

Preparation

Step 1

In a large stockpot, brown ground beef. Drain grease. Add in pepper and onion and cook until onion is translucent (do not brown onion).

Add tomato sauce, broth, herbs, salt and pepper to stockpot. Cover and simmer 30-45 minutes.

In a separate pot, boil 2 cups of water and add in rice. Add cooked rice to soup and serve. Refrigerate any leftovers.
