Ingredients

  • 3 tomatoes on the vine
  • 1/4 cup chopped red onion
  • 1/4 cup fresh basil leaves, chopped
  • 5 cloves garlic chopped
  • 8 oz fresh mozzarella cheese in water
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 loaf french bread

Preparation

Step 1

Combine olive oil, balsamic vinegar, and red onions in a small bowl and set aside.
Chop tomatoes and place in large bowl with tomato juice included.
Add chopped basil.
Add 2 garlic cloves, chopped.
Add oil, vinegar, and onion mix.
Let sit at least 10 minutes or overnight.

Preheat oven to 375 degrees.
Toast bread for 3-4 minutes.
Rub 3 garlic cloves chopped on to bread quickly, then place 1/4" slice of mozzarella on each piece of bread. May add 2 pieces depending on the size of mozzarella ball and size of bread slices.
Put back in oven for about 5 minutes or until cheese has melted.
Add tomato mixture and serve.
