- Vegetables of your choice.
Preparation
Step 1
1. Position rack in lower third of oven; preheat to 450 degrees.
2. Toss the vegetables with 4 teaspoons extra-virgin olive oil, 1/2 teaspoon salt, 1/4 teaspoon of pepper.
3. Spread the vegetables evenly on a rimmed baking sheet or roastin pan.
5. Roast, stirring once or twice, until the vegetables are tender and browned. (Root vegetables 20-35 minutes; green beans, brussel sprouts, broccoli 15-20 minutes)
Recommended: Cut lemons and squeeze juice over vegetables. Roast lemon wedges with vegetables.
