Jane's Three Bean Chili

Ingredients

  • 1 TBSP olive oil
  • 1 onion, chopped
  • 2 TBSP chili powder
  • 2 TBSP cumin
  • 1 can chili beans
  • 1 can black beans
  • 3 1/2 cups water
  • 1-2 chopped peppers
  • 3 cloves minced garlic
  • 1 tsp oregano
  • 12 oz beer
  • 1 can garbanzo beans
  • 28 oz crushed tomatoes
  • Pepper to taste
  • Smoked paprika to taste

Preparation

Step 1

Heat oil in Dutch oven. Add onion and cook for 5 minutes, until translucent.

Add peppers and cook 3 more minutes. Add garlic, chili powder, cumin, and oregano and cook for 2 minutes, until brown and fragrant.

Add beer and scrape up any bits stuck to the pot. Boil until reduced by half.

Add tomatoes, beans and water. Boil for 1 minute and then reduce heat.

Cover and simmer for 2-3 hours, stirring occasionally.

Add smoked paprika and pepper, and more water, if needed. Enjoy!
