Maitake Frondosa Pizza

Maitake Frondosa is one of the most flavorful of the cultivated mushrooms and one of the most treasured in Traditional Chinese Medicine. It has a slightly crunchy texture and finds an affinity with cheeses, dark greens,tomato sauces,poultry and meats. It may be substituted in any recipe calling for white or wild mushrooms.

Ingredients
- 1 pre-rolled cornmeal pizza crust (about 8 inches)
- 1 package Mycopia Maitake Frondosa , roughly chopped
- 1 Tablespoon olive oil
- 1/4 cup thin sliced white-part of green onion
- salt & pepper
- 1/2 cup grated Fontina, Jack or Machego cheese
- 2 Tablespoons fresh chopped basil (or 1/2 teaspoon dried)
- 2 Tablespoons thinly sliced green onopn , for garnish

Preparation
Step 1
Saute the sliced white onion with the rough chopped mushroom in medium skillet over medium-low flame for three or four minutes. Spread the mushroom mixture on the crust, sprinkle with a little salt and pepper, then the cheese. Bake a cording to directions. Scatter basil and green onion over the top after removing from the oven. Serve immediately.
