  • 2 c. whole milk
  • 1/4 c. white vinegar
  • 2 eggs
  • 1/4 c. (1/2 stick) cooled melted butter
  • 1/3 c. sugar
  • 2 1/2 c. ap flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 2 tsp. baking powder

Step 1

mix milk and vinegar together in a bowl and set aside for at least 5 minutes. whisk or sift together flour, salt, baking soda & powder in a bowl, set aside. add eggs to milk mixture and beat until well incorporated, then whisk in butter and sugar. with a spatula or wooden spoon gently fold in the flour mixture just until incorporated being careful not to over mix. mixture will still be a bit lumpy, that's okay. heat skillet or griddle over medium heat until a drop of oil sizzles. add about 2 tsp. of oil or butter to the skillet then scoop about a half cup of the mixture into pan. flip once the surface is covered in tiny holes.
