Wax Bean Salad

Ingredients

  • 8 oz. yellow wax beans, trimmed and halved crosswise8 oz.
  • 8 oz. green beans, trimmed and halved crosswise8 oz.
  • 1 ⁄4 cup olive oil1⁄4 cup
  • 2 Tbsp. fresh lemon juice2 Tbsp.
  • 1 Tbsp. sugar1 Tbsp.
  • 1 Tbsp. minced fresh thyme1 Tbsp.
  • 1 tsp. Dijon mustard1 tsp.
  • Salt and black pepper to taste
  • 1 ⁄2 cup sliced red onion1⁄2 cup

Preparation

Step 1

Blanch wax beans and green beans in a large pot of boiling salted water until crisp-tender, about 3 minutes. Drain beans and immediately plunge into ice water; drain beans again.

Combine oil, lemon juice, sugar, thyme, and Dijon; season with salt and pepper.

Toss beans and onion with vinaigrette to coat. Serve salad at room temperature.
