Jalapeno-Cheddar Fried Potatoes

Ingredients

  • 1 lb red-skinned potatoes, cut into 1 1/2 " pieces
  • 2 TBL peanut oil
  • 1/3 C chopped scallions
  • 1 jalapeno, sliced
  • S & P to taste
  • 1/2 C shredded white cheddar

Preparation

Step 1

BOIL potatoes in pot of salted water, 10 min, drain well

HEAT oil in cast-iron skillet over med-high
fry potatoes in oil until golden, 5 min

ADD scallions & jalapeno, fry 1 min
season w/ S & P

OFF HEAT, sprinkle cheddar onto potatoes
