Ingredients

  • 3 slices white bread, crusts removed
  • 1/3 cup skim milk
  • 1 1/2 lbs ground chuck
  • 1 onion, finely chopped - preferably sweet onion
  • 1 tsp. dried minced garlic
  • 1 egg, separated
  • 1 tsp. dried parsley
  • 6-8 ice cube chunks
  • 2 cups panko or regular bread crumbs
  • 1 tsp. salt
  • 1/2 tsp. pepper to taste
  • 1/4 cup vegetable oil
  • 4 TB butter

Step 1

Place the bread in a large bowl. Add the milk and let soak for 10 minutes. Squeeze the bread to remove most of the liquid. Tear the bread into small pieces. Add the meat, onion, garlic and egg yolk to the bowl. Mix the ingredients by hand until well blended. In a separate bowl, beat the egg white until "fluffed up" and then fold into the meat mixture. This gives the meat lightness. Form patties by hand into oval shapes and insert a chunk of ice into each patty. The chunks should be about 1/3 of a regular sized ice cube, and will keep the patties moist. Mix the breadcrumbs, salt and pepper on a plate and roll each patty in breadcrumbs. Press flat. Add the oil and butter to a frying pan and heat over medium. Put 4-6 patties in the pan and cook for 2 minutes on each side. Do not overcrowd. Turn down the heat to low and cook, covered, for another 6 minutes. Serve with kasha, rice, potatoes and sour cream.
