- 8 artichokes
- 6 eggs
- 3 oz of grated parmesan cheese pulu 2 T for topping
- salt and pepper to taste
- 1 T butter
- 2 T bread crumbs
- 7 oz mozzarella thinly sliced or shredded
- 10 inch bundt pan
Preparation
Step 1
preheat oven to 400
fill larges pot with water, squeeze the jucie of one lemon into it and add the lemon too.
Bring the water to a boil then drop inthe articokes. Cook for 2 min or until one of the central leaves comes away with a liit give.
Drain and cool. pull abawa tan discarethe outer tough leaves. pell and trim the stems and cut awaby the choke if there is any. Qurater art. and them cut quarters in half aain.
Beat the eggs with the cheese nd season with salt and pepper.
Butter the pan generouly, then dust with the bread crumbs, knokcing out the excess. now buils up the timable in the pan by layering articokes, then sprinkle evelnly with mozzarella, then art. End with Art. Pour egg and cheese misture into the pan, sprinkly with extra cheese and bake 25 to 30 min. until set and golden. Serve at room temp.
