Ingredients
- 1 cup orange juice
- 1/4 cup maple syrup
- 2 tablespoons rice vinegar or cider vinegar
- 2 teaspoons minced seeded chipotle chile in adobo sauce, drained, plus 2 tsp adobo sauce
- 1/4 teaspoon salt
- 2 14 oz pkg extra firm tofu, drained & patted dry
- 1 tablespoon veg oil
Preparation
Step 1
whisk together oj, maple syrup, vinegar, chipotle chile, adobo sauce & salt in small bowl. cover & chill
cut tofu into 1/2 thick slices, place in shallow baking glass baking dish
add 1/2 cup oj mixture & oil, turn to coat
cover & refrigerate at least 30 mins or up to 8 hrs, turn from time to time
reserve rest of of mixture in refrig
line large baking sheet with foil, coat with cooking spray
Place tofu on sheet, broil 6-8 mins per side til golden, basting occasionally with oj mixture
combine marinade & reserved oj mixture in small sauce pan, simmer overr medium 12 - 15 mins til syrupy, keep warm
serve with remaining sauce
