Ingredients
- 3 cups flour, all purpose
- 2 1/2 cups flour, white whole wheat
- 2 tablespoons baking powder
- pinch salt
- 6 eggs
- 1 cup sugar, granulated
- 1 1/2 sticks unsalted butter, melted & cooled
- 2 tablespoons vanilla extract
- Icing
- 1 1/2 cups confectioner's sugar
- 2 tablespoons lemon juice
- 1 teaspoon grated lemon peel
- few drops water
Preparation
Step 1
Preheat oven to 350
In a small bowl, combine both flours, baking powder & salt, mix well
In mixer bowl: beat eggs til combined, whisk in the granulated sugar in a stream, then add cooled melted butter & vanilla extract
Fold in the dry ingredients
Turn dough onto floured board & knead lightly. Roll into ropes, cut into logs or make into knot or circle shapes
Place on parchment lined paper & bake until puffed & golden, about 20 - 30 mins depending on size
Cool on rack
Icing: mix confectioners sugar with lemon juice & peel, add a few drops of water to make proper consistency for dipping
Dip cookies into icing, sprinkle with colored sprinkles if desired & allow to dry
