  • 1 T. OIL
  • 6 SLICES COOKED BACON, CRUMBLED
  • 3 SLICED WHITE BREAD, CRUSTS REMOVED
  • 1/2 C. MILK
  • 1/2 C FINELY CHOPPED ONION
  • 3 T.PC SMOKY BARBEQUE RUB, DIVIDED
  • 2 CLOVES GARLIC, PRESSED
  • 1/4 C FRESH PARSLEY
  • 1 EGG YOLK
  • SALT, PEPPER
  • 1 1/2 POUNDS LEAN GROUND BEEF
  • 1 1/2 C SHREDDED SHARP CHEDDER CHEESE, DIVIDED
  • 1/4 C. KETCHUP

Preparation

Step 1

SLICE MUSHROOMS. HEAT OIL, ADD MUSHROOMS AND COOK 3-4 MINUTESUNTIL THEY BEGIN TO BROWN.REMOVE SKILLET FROM HEAT. SET ASIDE 1T BACON. ADD REMAINING BACON TO MUSHROOMS, MIX WELL.
MEANWHILE CUT BREAD INTO CUBE. COMBINE BREAD, MILK, ONION, PARSLEY, EGG YOLK, 2T. RUB, GARLIC, SALT, PEPPER, MIX WELL. ADD BEEF TO BREAD MIXTURE, MIX. PLACE 2/3 OF MEAT IN DEEP COVERED BAKER.FORM A LOAF, GENTLY PRESS DOWN CENTER TO MAKE A WELL. SPRINKLE 1/2 C CHEESE IN THE WELL. TOP WITH BACON MIXTURE AND ADDITIONAL CHEESE.PLACE REMAINING MEAT OVER FILLING. PRESS TO SEAL.
MICROWAVE, COVERED ON HIGH 14-17 MINUTES. CAREFULLY REMOVE BAKER FROM OVEN.
MEANWHILE, COMBINE KETCHUP, AND REMAINING RUB, STIR.BRUSH KETCHUP OVER MEAT LOAF. MICROWAVE COVERED 3-5 MINUTES. SPRINKLE WITH REMAINING CHEESE AND RESERVED BACON OVER TOP.LET STAND COVERED 10 MINUTES BEFORE SLICING.
