Tofu w/String Beans Stir Fry

String bean & tofu stir fry

Ingredients

  • 1/4 cup soy sauce (used light)
  • 3 tablespoons dry sherry
  • 2 teaspoons cornstarch
  • 1 package firm tofu, drained & cut into 1/2" dice
  • 1/2 cup cashews
  • 1 pound string beans
  • 3 tablespoons veg oil
  • 3/4 teaspoon grated ginger
  • 2 red onions (used regular)
  • 1 1/2 teaspoons chopped garlic
  • 1 cup vegetable broth
  • 1/8 to 1/4 tsp hot sauce (or 1/2 tsp chile oil)
  • garnish: small red hot peppers
  • cashews
  • opt but necessary: add sugar to taste to marinade
  • opt: mix more cornstarch into reserved marinade for extra thickening
  • opt: add canned mushrooms, water chestnuts, carrots etc
  • opt: add a few drops of sesame oil & top w/sesame seeds

Preparation

Step 1

Drain tofu & cut into 1/2" dice

Whisk together soy sauce, sherry & cornstarch til cornstarch dissolves. Add tofu, stir to coat & set aside.
Remove tofu from marinade, reserve marinade; saute tofu in hot oil til browned, about 3 mins. Transfer tofu to bowl & set aside.

Saute onions in oil, add chopped garlic & ginger.

Add green beans & saute, add cornstarch dissolved in veg broth, reserved marinade, hot sauce & tofu.
Add few drops sesame oil

Bring to boil, stirring constantly til mixture thickens.

Sprinkle with roasted cashews or sesame seeds
Serve with brown rice or quinoa
