  • 6 eggs
  • 2/3 cup splenda
  • 2 teaspoons vanilla extract
  • 30 ounces ricotta cheese
  • 2 teaspoons grated lemon zest

Preparation

Step 1

Preheat oven to 325,spray springform pan

separate eggs

beat egg yolks vanilla & suagar til thick & light

add ricotta& zest & mix

beat egg whites til stiff peaks, fold into yolk mixture & pour into pan

bake til golden about 1 hour & 20 mins

ltransfer to rack, let cool completely; refrigerate at least 6 hours
