Rice Pudding

Ingredients

  • double recipe:
  • 3 cups milk
  • 1/3 cup long grained rice (or sushi rice)
  • 1/8 cup raisins or dried fruit bits (optional or to taste)
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 tsp nutmeg
  • Opt: cinnamon & sugar

  • 6 cups milk
  • 2/3 cup long grained rice (or sushi rice)
  • 1/4 cup raisins or dried fruit bits (optional or to taste)
  • 1/2 cup sugar
  • 2 teaspoons vanilla extract
  • 1/2 tsp nutmeg
  • Opt: cinnamon & sugar

Preparation

Step 1

Bring milk just to boiling

Stir in rice & raisins

Cover & cook on low heat 30 - 40 mins til most of milk is absorbed -(taste rice to test that it is done - soft - some liquid should remain or pudding will be dry) (stirring occasionally) (mixture may appear curdled)

Remove from heat, stir in sugar & vanilla

Sprinkle with nutmeg / opt: sprinkle w/cinnamon sugar

Add a splash of milk to cooled pudding if desired

* working on converting to brown rice:
1/2 cup brown rice, 4 cups milk, 1 tsp vanilla, 1/4 cup sugar; cook for about 60- 70 mins
