Pasta Primavera With Tofu

Ingredients

  • olive oil
  • tofu, cut into small cubes
  • onions, sliced
  • garlic, minced
  • assorted vegetables: snow peas, carrots, green beans, peppers, etc
  • Pasta (any shape, I used bow ties)

Preparation

Step 1

Cut tofu into small cubes, marinate in olive oil & crushed garlic about 1/2 hour
Put pot of water to boil.

Saute tofu in olive oil til cubes develop a little color. Remove from pan & hold on side

Saute onions in olive oil til lightly caramelized. Add garlic & saute 1-2 mins. Add vegetables starting with those that take longest to cook, add the rest of the vegs.
Add salt & pepper to taste while cooking.
*can add some white wine &/or vegetable broth if desired
*can blanch vegetables first if desired

Add salt to boiling water, add pasta & cook til al dente

Mix pasta with vegetables & tofu. Add a little extra olive oil, salt & pepper to taste.
