Ingredients
- Note: 1 cup cake flour = 1 cup AP flour minus 2 tbs AP flour & add 2 tbs cornstarch, sift together-see for directions on substituting AP flour for cake flour:
- 3/4 cup egg yolks (8)
- 2/3 cup sugar
- 1 teaspoon grated orange peel - use more
- 1/2 cup orange juice
- 1 cup cake flour, sifted
- 1 cup egg whites (8)
- 1 teaspoon cream of tartar
- 1/2 teaspoon salt
- 2/3 cup sugar
- 1 1/2 teaspoons lemon extract

- Total flour = 1 cup cake flour
- Total sugar = 1 1/3 cups
- Bake at 325 for 70 - 75 mins
Preparation
Step 1
Beat egg yolks til thick & lemon colored; gradually add 2/3 cup sugar, beating til thick.
Combine peel, juice & extract, add to egg mixture alternating with flour.
Beat egg whites with cream of tartar & salt til soft peaks, gradually add 2/3 cup sugar, beating til stiff peaks.
Fold into yolk mixture
Bake in ungreased 10" tube pan at 325 for about 70 - 75 mins
Invert & cool
