Noodle Pudding Vegan

Ingredients

  • optional:
  • 2 packages mori-nu lite tofu-firm
  • 1/2 cup soy sour cream
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 8 0z noodles or fettucine
  • 16 ounces can fruit cocktail, drained ("very cherry" has no pineapple)
  • 1 or 2 apples, chopped
  • cinnamon & sugar mixture

Preparation

Step 1

Preheat oven to 350

puree 1 container tofu with sour cream, sugar & salt, pour into bowl

crumble second pkg tofu & add to mixture in bowl

Add fruit to bowl

cook noodles til a little under done in boiling salted water, drain well

Mix noodles & contents of bowl

pour into greased 10" casserole, sprinkle liberally with cinnamon & sugar

bake 25 mins til starts to brown
