- ingredients for Trader Joes Scoville Scoundrel:
- mangoes, sugar, cider vinegar, hot sauce (cayenne pepper, vinegar, salt, garlic) habanero peppers, xanthan gum, salt

Step 1
Spicy mango dipping sauce:
1 ripe mango, peeled & roughly chopped
1 large shallot, peeled & roughly chopped
1 tbs rice vinegar
1 tbs sambal (Chili paste)
1 orange, juiced
2 tbs canola oil
salt & pepper to taste
In blender: blend 1st 5 ingredients, add oil; season with salt & pepper
Mango Jalapeno sauce:
1 lb mangos, diced
1 1/2 cups sugar
3 oz champagne vinegar
2 tbs garlic, minced
4 jalapenos, seeded & sliced
1/2 tsp salt
Combine 1st 5 ingred in non stick pan; bring to boil
reduce heat & simmer 10 mins
add jalapenos & salt
serve hot or cold
Mango habanero sauce:
1 tbs canola oil
1 small spanish onion, finely chopped
2 cloves garlic, finely chopped
2 ripe mangoes, peeled, pitted & coarsely chopped
1 habanero, chopped
1 cup white wine vinegar
salt
Heat oil over medium heat; add all but salt & cook over low heat 15 - 20 mins. Puree in blender til smooth, if too thick add a few tbs warm water or vinegar. Season with salt.
"Twisted Hot Sauce":
1/2 red onion, julienned
4 tbs extra virgin olive oil
2 tsp passion fruit puree
1 tsp rehydrated & pureed cascabel chile
2 tbs mango puree
2 tbs sherry vinegar
2 scallions, finely sliced
salt & pepper
Saute the onion in olive oil until lightly caramelized. Add passion fruit, cascabel chile & mango purees. Reduce mixture for 2 mins, add sherry wine vinegar. Chill the sauce, add scallions to mixture & serve warm.
