Cake -Vanilla Buttermilk - vegan

Adapted from The Artful Cupcake - Chocolate Buttermilk cupcakes

Ingredients

  • 2 1/3 cups AP flour THIS SHOULD READ 2 1/6 CUPS -REFUSES TO SAVE AS SUCH
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1 cup buttermilk (for vegan add 1 tbs vinegar to soy milk)
  • 1/2 cup veg oil
  • 1/4 cup apple sauce (for extra moistness-not in orig recipe-(in Co use 1/8 cup)
  • 1 tablespoon vanilla extract - use less if using vanilla milk, also for lighter color

Preparation

Step 1

Preheat oven to 350, prepare cupcake pans- makes 24 cupcakes or (2) 8 or 9" cake pans-shortening & flour pans

Sift together flour, baking soda, salt & sugar; mix til blended

Add buttermilk, oil, vanilla & applesauce ; beat til smooth

Pour batter into cupcake pans or (2) 8 or 9" pans

Bake 15 - 20 mins for cupcakes, test with toothpick

Cool cakes in pan on rack 10-15 mins before turning out on rack to completely cook before frosting

For Wilton character cake pan use 1 1/2 recipe
